A savory, low-carb casserole combining lean ground turkey, fresh zucchini, and melted cheese for a healthy, comforting meal.
Ingredients
1 lb ground turkey
3 medium zucchinis, thinly sliced
1 small onion, diced
2 cloves garlic, minced
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 cup marinara sauce
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
Fresh basil or parsley for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, sauté until translucent, about 3 minutes.
- Add ground turkey, breaking it apart with a spatula. Cook until browned and no longer pink, about 6-8 minutes. Season with salt, pepper, and Italian seasoning.
- Stir in marinara sauce and cook for another 2 minutes. Remove from heat.
- Grease a 9×13-inch baking dish. Arrange half of the sliced zucchini in an even layer.
- Spread half of the turkey mixture over the zucchini layer. Sprinkle with half of the mozzarella and Parmesan cheese.
- Repeat with remaining zucchini, turkey mixture, and cheeses.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake for an additional 10 minutes or until cheese is bubbly and golden.
- Let cool slightly before serving. Garnish with fresh basil or parsley if desired.
Notes
Marinara sauce can be swapped for tomato basil sauce for a different flavor.
Add red pepper flakes for a spicy kick.
Mix in shredded cheddar or provolone for extra cheesiness.
For vegetarian option, replace turkey with sautéed mushrooms or lentils.
Add chopped spinach or kale for extra veggies.
Store leftovers in airtight container in fridge up to 3 days.
Reheat covered in oven at 350°F for 15-20 minutes or microwave for 2-3 minutes.
