Description
A delicious snack or appetizer made with a savory spinach and feta filling wrapped in a flaky puff pastry.
Ingredients
1 sheet puff pastry, thawed
2 cups fresh spinach, chopped
1 tablespoon olive oil
1/4 cup red onion, finely chopped
1/4 cup feta cheese, crumbled
1/4 cup ricotta cheese
1 egg (for egg wash)
1/2 teaspoon garlic powder
Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Heat the olive oil in a skillet over medium heat. Add the finely chopped red onion and sauté for 2-3 minutes, until softened.
- Add the chopped spinach to the skillet and cook for another 2-3 minutes, stirring frequently, until the spinach is wilted. Remove the skillet from the heat and allow the mixture to cool.
- In a medium bowl, combine the spinach and onion mixture with crumbled feta cheese, ricotta cheese, garlic powder, salt, and pepper. Mix well.
- On a lightly floured surface, roll out the puff pastry sheet and cut it into 4 equal squares.
- Spoon a generous amount of the spinach and feta mixture into the center of each pastry square.
- Fold the squares over to form either triangles or rectangles, and pinch the edges to seal the pastry tightly.
- Beat the egg and brush the egg wash over the top of each pastry for a beautiful golden finish.
- Place the pastries on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden and puffed.
- Let the pastries cool slightly before serving. Enjoy!
Notes
You can add fresh herbs like basil, parsley, or thyme to the filling for extra flavor.
If you’re not a fan of feta, goat cheese or mozzarella can be used as alternatives.
Add a pinch of red pepper flakes or chopped jalapeños to spice it up.
Leftovers can be stored in an airtight container in the fridge for up to 3 days, or frozen before baking.
If reheating, use the oven at 350°F (175°C) for about 10 minutes to restore crispiness.
