Savory Spinach and Feta Stuffed Puff Pastry

Description

A delicious snack or appetizer made with a savory spinach and feta filling wrapped in a flaky puff pastry.


Ingredients

1 sheet puff pastry, thawed

2 cups fresh spinach, chopped

1 tablespoon olive oil

1/4 cup red onion, finely chopped

1/4 cup feta cheese, crumbled

1/4 cup ricotta cheese

1 egg (for egg wash)

1/2 teaspoon garlic powder

Salt and pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat the olive oil in a skillet over medium heat. Add the finely chopped red onion and sauté for 2-3 minutes, until softened.
  3. Add the chopped spinach to the skillet and cook for another 2-3 minutes, stirring frequently, until the spinach is wilted. Remove the skillet from the heat and allow the mixture to cool.
  4. In a medium bowl, combine the spinach and onion mixture with crumbled feta cheese, ricotta cheese, garlic powder, salt, and pepper. Mix well.
  5. On a lightly floured surface, roll out the puff pastry sheet and cut it into 4 equal squares.
  6. Spoon a generous amount of the spinach and feta mixture into the center of each pastry square.
  7. Fold the squares over to form either triangles or rectangles, and pinch the edges to seal the pastry tightly.
  8. Beat the egg and brush the egg wash over the top of each pastry for a beautiful golden finish.
  9. Place the pastries on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden and puffed.
  10. Let the pastries cool slightly before serving. Enjoy!

Notes

You can add fresh herbs like basil, parsley, or thyme to the filling for extra flavor.

If you’re not a fan of feta, goat cheese or mozzarella can be used as alternatives.

Add a pinch of red pepper flakes or chopped jalapeños to spice it up.

Leftovers can be stored in an airtight container in the fridge for up to 3 days, or frozen before baking.

If reheating, use the oven at 350°F (175°C) for about 10 minutes to restore crispiness.
