Ingredients
1 sheet puff pastry, thawed
1 cup fresh spinach, chopped
1/2 cup crumbled feta cheese
1/4 cup ricotta cheese
1 small onion, finely chopped
1 clove garlic, minced
1/4 teaspoon nutmeg
Salt and pepper, to taste
1 egg (for egg wash)
1 tablespoon olive oil
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Heat olive oil in a skillet over medium heat. Sauté onion and garlic for 2-3 minutes.
- Add spinach and cook until wilted (3-4 minutes). Cool slightly.
- Combine spinach mixture with feta, ricotta, nutmeg, salt, and pepper.
- Roll out puff pastry and cut into 3-inch squares.
- Add a spoonful of filling to the center of each square.
- Fold squares into triangles or bundles; seal edges tightly.
- Brush pastries with beaten egg.
- Bake for 15-18 minutes until golden and puffed. Serve warm or at room temperature.
Notes
For best results, cool the spinach mixture before filling the pastry to prevent sogginess.
Store leftovers in the refrigerator for up to 3 days or freeze unbaked bites for later.
