Ingredients
For the Pumpkin Bars:
1 can (15 oz) Libby’s 100% Pure Pumpkin
4 large eggs
1 ½ cups granulated sugar
1 cup vegetable oil
2 cups all-purpose flour
2 tsp baking powder
1 tsp baking soda
1 ½ tsp ground cinnamon
½ tsp ground nutmeg
¼ tsp ground ginger
¼ tsp salt
For the Cream Cheese Frosting:
8 oz cream cheese, softened
½ cup unsalted butter, softened
4 cups powdered sugar
1 tsp vanilla extract
2 tbsp heavy cream or milk (as needed for consistency)
Instructions
- Preheat the Oven:
Preheat oven to 350°F (175°C). Grease a 9×13-inch sheet pan or line with parchment paper. - Prepare the Pumpkin Bars:
- In a large bowl, mix pumpkin, eggs, sugar, and vegetable oil until smooth.
- In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
