1 teaspoon Dijon mustard
1 teaspoon paprika
½ cup sour cream
1 tablespoon cornstarch (optional, for thickening)

8 ounces egg noodles or rice, cooked

Instructions
- Heat 1 tablespoon butter and olive oil in a large skillet over medium-high heat. Add the beef slices, season with salt and pepper, and sear for 2-3 minutes until browned. Remove and set aside.
- In the same skillet, melt the remaining butter. Add the chopped onion and sauté until softened, about 2 minutes.
- Stir in the garlic and mushrooms, cooking until the mushrooms are tender and browned, about 5 minutes.
- Pour in the beef broth, Worcestershire sauce, Dijon mustard, and paprika. Stir to combine.
- Return the beef to the skillet and simmer for 5 minutes, allowing the flavors to meld together.
- Lower the heat and stir in the sour cream. If a thicker sauce is desired, mix cornstarch with 2 tablespoons of water and stir into the sauce. Simmer for another 2 minutes.
- Serve the stroganoff over cooked egg noodles or rice, garnished with fresh parsley.
