Ingredients

4 medium potatoes, diced

2 tablespoons olive oil

1 small onion, chopped

1 bell pepper, diced (any color)

1/2 cup shredded cheese (optional)

1/2 teaspoon paprika

Salt and pepper to taste

Fresh parsley for garnish

Instructions

  3. Add chopped onion and bell pepper; sauté for 3-4 minutes until softened.
  4. Stir in spinach and cook for 2 minutes, until wilted.
  5. Create 4 wells in the mixture and crack an egg into each well.
