Ingredients

4 boneless, skinless chicken breasts

1 (14 oz) can diced tomatoes

1 (14 oz) can tomato sauce

1 cup heavy cream

1/2 cup chicken broth

1/4 cup grated Parmesan cheese

1 medium onion, finely chopped

4 cloves garlic, minced

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes (optional)

Fresh basil leaves, chopped (for garnish)


Instructions

  1. Place the chicken breasts in the slow cooker.
  2. In a medium bowl, combine the diced tomatoes, tomato sauce, heavy cream, chicken broth, Parmesan cheese, onion, garlic, dried basil, dried oregano, salt, black pepper, and crushed red pepper flakes. Mix well.
  3. Pour the tomato mixture over the chicken breasts in the slow cooker.
  4. Cover and cook on low for 4-6 hours or until the chicken is tender and cooked through.
  5. Once the chicken is done, remove it from the slow cooker and set aside. Use an immersion blender to blend the sauce until smooth (optional).
  6. Return the chicken to the slow cooker and stir to coat it with the sauce.

Notes

For a smoother sauce, blend it with an immersion blender or in a stand blender before returning the chicken to the slow cooker.

Chicken thighs can be used as a substitute for chicken breasts if preferred.

To make this dish dairy-free, replace heavy cream with coconut milk and omit Parmesan cheese.
