Description

Ingredients

4 boneless, skinless chicken thighs or breasts

1.5 pounds baby potatoes, halved

1/3 cup grated Parmesan cheese

4 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon Italian seasoning

1/2 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

1/2 cup chicken broth

Fresh parsley, chopped (for garnish)

Optional: extra Parmesan for topping


Instructions

  1. In a small bowl, mix together the Parmesan cheese, garlic, onion powder, Italian seasoning, smoked paprika, salt, and black pepper.
  2. Place the chicken and halved baby potatoes in the slow cooker.
  3. Drizzle the olive oil over the chicken and potatoes, then sprinkle the seasoning mixture evenly on top.
  4. Pour the chicken broth around the sides of the slow cooker to keep everything moist.
  5. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is tender and the potatoes are soft.
