Description

Ingredients

2 lbs baby potatoes (Yukon Gold or red, halved if large)

3 tbsp olive oil or melted butter

4 garlic cloves, minced

1 tsp dried rosemary

1 tsp dried thyme

1/2 tsp paprika

Salt and pepper, to taste

1/4 cup grated Parmesan cheese (optional)

Fresh parsley, chopped, for garnish


Instructions

  1. Prep the Potatoes: Wash and dry the potatoes, then place them in a slow cooker.
  2. Mix Seasoning: Combine olive oil or butter, garlic, rosemary, thyme, paprika, salt, and pepper in a bowl. Pour over potatoes and toss to coat.
  3. Cook: Cover and cook on high for 3-4 hours or low for 6-8 hours, until fork-tender.
  4. Optional Crisp Finish: Transfer cooked potatoes to a baking sheet, sprinkle with Parmesan cheese, and broil for 3-5 minutes.
  5. Garnish and Serve: Top with fresh parsley before serving.

Notes

For Crispier Potatoes: Broiling is optional but highly recommended for a golden finish.

Make it Vegan: Use olive oil instead of butter and omit the Parmesan cheese.
