Ingredients

1 can (15 oz) chickpeas, drained and rinsed

1 ripe avocado, peeled and mashed

¼ cup dill pickle, chopped

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

1 tablespoon olive oil

Salt and pepper, to taste

4 slices whole grain bread

Fresh dill, for garnish (optional)


Instructions

  1. In a bowl, mash chickpeas with a fork or potato masher until slightly chunky.
  2. Add mashed avocado, chopped dill pickles, Dijon mustard, lemon juice, olive oil, salt, and pepper. Mix well.
  3. Toast the bread slices to your preference.
  4. Spread the chickpea-avocado mixture onto two slices of toasted bread.
  5. (Optional) Top with fresh dill for extra flavor, then place the remaining slices on top to complete the sandwiches.
