Ingredients

1 whole turkey (1214 pounds)

1/4 cup olive oil or melted butter

1/4 cup kosher salt

2 tablespoons paprika

2 tablespoons garlic powder

2 tablespoons onion powder

1 tablespoon dried thyme

1 tablespoon dried rosemary

1 teaspoon black pepper

1/2 teaspoon cayenne pepper (optional)

1 apple, quartered

1 onion, quartered

1 lemon, halved

4 cups apple cider or chicken stock

Wood chips (apple, hickory, or your choice) for smoking


Instructions

  1. Preparation: Remove the giblets and neck from the turkey. Rinse under cold water and pat dry with paper towels.
  2. Seasoning: Combine salt, paprika, garlic powder, onion powder, thyme, rosemary, black pepper, and cayenne pepper in a small bowl. Coat the turkey with olive oil or melted butter and generously rub the spice mix inside, outside, and under the skin.
  3. Stuffing: Stuff the turkey cavity with apple, onion, and lemon to enhance moisture and flavor.
  4. Smoking Setup: Preheat the smoker to 225°F (107°C) and prepare wood chips according to the manufacturer’s instructions.
  5. Smoking: Place the turkey breast-side up on the smoker rack. Pour apple cider or chicken stock into a drip pan beneath the turkey to catch drippings and retain moisture.
  6. Cooking: Smoke the turkey for 30–40 minutes per pound, or until the internal temperature reaches 165°F (74°C) in the breast and 175°F (79°C) in the thickest part of the thigh. Baste occasionally with drippings for added flavor.
  7. Resting: Remove the turkey from the smoker and let it rest for 20–30 minutes before carving to redistribute the juices.

Notes

Brining overnight adds extra juiciness and flavor.

To achieve a classic smoky flavor, use hickory wood chips.
