Ingredients
2 large chicken breasts
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
Juice of 1 lime
2 cups cooked jasmine or basmati rice
1 1/2 cups corn kernels (fresh, frozen, or grilled)
1/4 cup mayonnaise or Greek yogurt
2 tablespoons crumbled cotija or feta cheese
1 tablespoon lime juice
1/4 teaspoon chili powder (for corn mixture)
1/4 cup chopped fresh cilantro
1 avocado, sliced
1/2 cup cherry tomatoes, halved
Extra lime wedges for serving
Instructions
- Preheat a grill pan or skillet over medium heat. In a small bowl, mix chili powder, smoked paprika, garlic powder, cumin, salt, and black pepper.
- Rub the chicken breasts with olive oil and fresh lime juice, then coat evenly with the spice mixture.
- Cook the chicken for 5–7 minutes per side, or until the internal temperature reaches 165°F (74°C). Let rest for 5 minutes, then slice.
- In a separate bowl, combine corn, mayonnaise (or Greek yogurt), cotija or feta cheese, lime juice, chili powder, and half of the chopped cilantro. Stir until creamy and well mixed.
- Divide the cooked rice evenly among four bowls.
- Top each bowl with sliced chicken and a generous scoop of the creamy street corn mixture.
- Add sliced avocado and cherry tomatoes. Garnish with remaining cilantro and serve with extra lime wedges.
Notes
Use Greek yogurt instead of mayonnaise for a lighter option.
Grilled chicken thighs can be substituted for extra juiciness.
