Description

Ingredients

2 cups cooked shredded chicken (rotisserie works well)

1 cup cooked rice (white, brown, or Mexican-style)

1 cup black beans, rinsed and drained

1 cup shredded cheddar or Monterey Jack cheese

1/2 cup salsa

1 teaspoon chili powder

1/2 teaspoon cumin

Salt and pepper to taste

6 large flour tortillas

1 cup red enchilada sauce

1/2 cup sour cream

1/4 cup chopped cilantro (optional)


Instructions

  1. Preheat the oven to 375°F (190°C). Grease a large baking dish.
  2. In a large bowl, mix shredded chicken, cooked rice, black beans, half the cheese, salsa, chili powder, cumin, salt, and pepper.
  3. Lay out tortillas and fill each with an equal portion of the mixture. Roll tightly and place seam-side down in the baking dish.
  4. Combine enchilada sauce and sour cream in a small bowl, then pour over the burritos.
  5. Sprinkle remaining cheese on top. Cover with foil and bake for 20 minutes.
  6. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
