Ingredients
2 cups cooked shredded chicken (rotisserie works well)
1 cup cooked rice (white, brown, or Mexican-style)
1 cup black beans, rinsed and drained
1 cup shredded cheddar or Monterey Jack cheese
1/2 cup salsa
1 teaspoon chili powder
1/2 teaspoon cumin
Salt and pepper to taste
6 large flour tortillas
1 cup red enchilada sauce
1/2 cup sour cream
1/4 cup chopped cilantro (optional)
Instructions
- Preheat the oven to 375°F (190°C). Grease a large baking dish.
- In a large bowl, mix shredded chicken, cooked rice, black beans, half the cheese, salsa, chili powder, cumin, salt, and pepper.
- Lay out tortillas and fill each with an equal portion of the mixture. Roll tightly and place seam-side down in the baking dish.
- Combine enchilada sauce and sour cream in a small bowl, then pour over the burritos.
- Sprinkle remaining cheese on top. Cover with foil and bake for 20 minutes.
- Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
- Garnish with cilantro, if desired, before serving.
