Ingredients

4 boneless, skinless chicken breasts

1 cup long-grain rice

1 cup heavy cream

1 onion, chopped

2 cloves garlic, minced

1 cup mushrooms, sliced

1 cup broccoli florets

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley for garnish


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Season chicken breasts with salt and pepper, then brown on both sides, about 4-5 minutes per side. Remove and set aside.
  4. In the same skillet, add onion and garlic. Sauté until translucent, about 3 minutes.
  5. Add mushrooms and broccoli, cook for another 5 minutes.
  6. Stir in rice and cook for 2 minutes, allowing the rice to absorb flavors.
  7. Pour in chicken broth and heavy cream, stirring to combine.
  8. Place the browned chicken breasts back into the skillet, covering them with the rice mixture.
