Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup light brown sugar, packed
1 large egg
1 teaspoon vanilla extract
2 3/4 cups all-purpose flour
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup granulated sugar (for rolling)
1 teaspoon ground cinnamon (for rolling)
Filling options: caramel sauce, chocolate ganache, jam, or Nutella
Instructions
- Preheat the oven to 375°F (190°C) and line baking sheets with parchment paper.
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until fully incorporated.
- In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
- In a small bowl, combine 1/4 cup granulated sugar and cinnamon. Roll the cookie dough into 1-inch balls and then roll each ball in the cinnamon-sugar mixture to coat.
- Place the dough balls on the prepared baking sheets about 2 inches apart. Use your thumb or the back of a teaspoon to press a small indent into the center of each cookie.
- Bake for 10-12 minutes or until the edges are set and lightly golden. Remove from the oven and allow cookies to cool slightly.
- Fill the thumbprint centers with your desired filling, such as caramel sauce, chocolate ganache, or jam, and let the cookies cool completely before serving.
Notes
Chill the Dough: If your dough is too soft, chill it for 15-30 minutes before rolling into balls to prevent spreading.
Filling Options: Get creative with different fillings like peanut butter, lemon curd, or even frosting for a unique twist.
