Description

Soft Gingerbread Cookies are a holiday classic with a perfectly spiced, chewy texture. These comforting treats are easy to make, versatile for decorating, and perfect for festive gatherings or cozy family baking sessions.

Ingredients

3 1/4 cups all-purpose flour

1 1/2 tsp ground ginger

1 tsp ground cinnamon

1/2 tsp ground cloves

1/4 tsp ground nutmeg

1/2 tsp baking soda

1/2 tsp salt

3/4 cup unsalted butter, softened

1 cup packed brown sugar

1 large egg

1/2 cup molasses

1 tsp vanilla extract

1/4 cup granulated sugar (for rolling)

Instructions

  1. Prepare the Dough
    • Whisk together flour, baking soda, salt, and spices.
    • Beat softened butter and brown sugar until fluffy. Add egg, molasses, and vanilla.
  2. Combine Wet and Dry Ingredients
    • Gradually mix dry ingredients into wet until dough forms. Divide, wrap, and chill for 1 hour.
  3. Shape the Cookies
    • Preheat oven to 350°F (175°C). Roll dough to 1/4-inch thickness and cut into shapes.
  4. Roll in Sugar
    • Coat cookies in granulated sugar and place on a lined baking sheet.
  5. Bake
    • Bake 8-10 minutes. Cool before decorating if desired.

Notes

Chilling the dough helps maintain cookie shapes during baking.

Store at room temperature in an airtight container for up to a week, or freeze undecorated cookies for three months.
