Ingredients

For the Pumpkin Cookies:

1/2 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup canned pumpkin puree

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

For the Cream Cheese Frosting:

4 ounces cream cheese, softened

1/4 cup unsalted butter, softened

1 1/2 cups powdered sugar

1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy. Add pumpkin puree, egg, and vanilla extract; mix until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
  5. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes or until set and lightly golden. Let cool on a wire rack.
  6. For the frosting, beat together the softened cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, beating until creamy.
  7. Once the cookies are completely cooled, spread the cream cheese frosting generously on top.
