2 cups elbow macaroni

1/4 teaspoon smoked paprika (optional)

1/2 cup crushed Ritz crackers (optional)


Instructions

  1. Cook the Macaroni: Preheat oven to 350°F (175°C). Cook macaroni in salted boiling water until al dente. Drain and set aside.
  2. Make the Cheese Sauce: In a saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes. Gradually add milk and cream, whisking until smooth and thickened, about 3-4 minutes.
  3. Add the Cheese: Remove from heat and stir in 2 1/2 cups of shredded cheddar cheese until melted and smooth. Season with salt, pepper, and smoked paprika if using.
  4. Combine with Pasta: Mix the cheese sauce with the cooked macaroni. Pour into a greased 9×13-inch baking dish.
