Ingredients
6 bone-in, skinless chicken thighs
1 large onion, sliced
1 can (10.5 oz) cream of chicken soup
1 packet onion soup mix
1/2 cup chicken broth
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon black pepper
1 tablespoon cornstarch (optional, for thickening)
1 tablespoon water (if using cornstarch slurry)
Chopped parsley (optional, for garnish)
Instructions
- Place the sliced onions at the bottom of the crockpot.
- Layer the chicken thighs over the onions.
- In a bowl, whisk together the cream of chicken soup, onion soup mix, chicken broth, garlic powder, paprika, and black pepper.
- Pour the mixture over the chicken, coating each piece well.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is tender.
- If using, mix cornstarch and water into a slurry and stir it into the crockpot about 20–30 minutes before serving to thicken the gravy.
- Serve hot over rice, mashed potatoes, or biscuits, garnished with chopped parsley if desired.

Boneless chicken thighs or breasts can be used for a leaner version.
