Description

Ingredients

6 bone-in, skinless chicken thighs

1 large onion, sliced

1 can (10.5 oz) cream of chicken soup

1 packet onion soup mix

1/2 cup chicken broth

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon black pepper

1 tablespoon cornstarch (optional, for thickening)

1 tablespoon water (if using cornstarch slurry)

Chopped parsley (optional, for garnish)


Instructions

  1. Place the sliced onions at the bottom of the crockpot.
  2. Layer the chicken thighs over the onions.
  3. In a bowl, whisk together the cream of chicken soup, onion soup mix, chicken broth, garlic powder, paprika, and black pepper.
  4. Pour the mixture over the chicken, coating each piece well.
  5. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is tender.
  6. If using, mix cornstarch and water into a slurry and stir it into the crockpot about 20–30 minutes before serving to thicken the gravy.
  7. Serve hot over rice, mashed potatoes, or biscuits, garnished with chopped parsley if desired.

Notes

Boneless chicken thighs or breasts can be used for a leaner version.

Add sliced mushrooms with the onions for a mushroom variation.
