Ingredients
4 large potatoes, peeled and thinly sliced
1 large onion, thinly sliced
6 large eggs
1/4 cup olive oil
Salt and pepper to taste
Fresh parsley for garnish
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease a mini muffin tin or a small baking dish.
- Heat the olive oil in a large skillet over medium heat. Add the sliced potatoes and onions, cooking until the potatoes are tender and the onions are soft and golden, about 10-12 minutes. Season with salt and pepper.
- In a large bowl, whisk the eggs and then add the cooked potatoes and onions, mixing to combine.
- Pour the mixture into the prepared muffin tin or baking dish, filling each cup or spreading evenly in the dish.
- Bake for 15-20 minutes, or until the eggs are set and the tops are golden.
- Remove from the oven and let the tortillas cool slightly before cutting into bite-sized pieces or serving as mini muffins. Garnish with fresh parsley.
Notes
For a richer flavor, you can add diced chorizo or bell peppers to the mixture before baking.
