Ingredients

4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1/2 cup ricotta cheese

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1 tsp Italian seasoning

1/2 tsp salt

1/2 tsp black pepper

1 tbsp olive oil

Toothpicks or kitchen twine


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Prepare the filling by mixing chopped spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, minced garlic, Italian seasoning, salt, and black pepper in a bowl.
  3. Create a pocket in each chicken breast using a sharp knife, being careful not to cut all the way through.
  4. Stuff each chicken breast with the spinach and cheese mixture, packing it tightly. Secure with toothpicks or kitchen twine.
  5. Heat olive oil in an oven-safe skillet over medium-high heat. Sear each stuffed chicken breast for 2-3 minutes on each side until golden brown.
  6. Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  7. Allow the chicken to rest for a few minutes before serving.

For a dairy-free version, substitute dairy-free cheese alternatives and cream cheese.

If using frozen spinach, thaw and drain thoroughly to avoid excess moisture in the filling.
