Ingredients

1 pie crust

4 eggs

1 cup milk

1 cup fresh spinach

1/2 cup feta cheese

1/4 cup diced onion

Salt to taste

Pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the pie crust into a baking dish and press it gently into place.
  3. In a mixing bowl, whisk together the eggs and milk until smooth.
  4. Stir in the spinach, feta cheese, diced onion, salt, and pepper.
  5. Pour the mixture evenly into the prepared crust.
  6. Bake for 35 to 40 minutes, or until the center is set and the top is lightly golden.
  7. Let cool for a few minutes before slicing and serving.

Notes

Frozen spinach can be used if thawed and well-drained.

Substitute feta with goat cheese or Swiss for a different flavor.

Add mushrooms, garlic, or bell peppers for variation.

Store leftovers in the refrigerator for up to 3 days.

Reheat in the oven at 325°F for best texture.
