Ingredients
1 pie crust
4 eggs
1 cup milk
1 cup fresh spinach
1/2 cup feta cheese
1/4 cup diced onion
Salt to taste
Pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Place the pie crust into a baking dish and press it gently into place.
- In a mixing bowl, whisk together the eggs and milk until smooth.
- Stir in the spinach, feta cheese, diced onion, salt, and pepper.
- Pour the mixture evenly into the prepared crust.
- Bake for 35 to 40 minutes, or until the center is set and the top is lightly golden.
- Let cool for a few minutes before slicing and serving.
Notes
Frozen spinach can be used if thawed and well-drained.
Substitute feta with goat cheese or Swiss for a different flavor.
Add mushrooms, garlic, or bell peppers for variation.
Store leftovers in the refrigerator for up to 3 days.
Reheat in the oven at 325°F for best texture.
