Ingredients

For the Crust:

1 1/2 cups all-purpose flour

1/2 cup butter, cold and cut into pieces

1/4 cup cold water

1/4 tsp salt

1 cup fresh spinach, chopped

1/2 cup crumbled feta cheese

1/2 cup shredded mozzarella cheese

4 large eggs

1 cup milk

1/2 tsp dried oregano

1/2 tsp dried basil

Salt and pepper to taste


Instructions

  1. Prepare the Crust: In a food processor, pulse flour, butter, and salt until the mixture resembles coarse crumbs. Gradually add cold water, pulsing until the dough comes together. Press the dough into a pie dish and refrigerate while preparing the filling.
  2. Preheat Oven: Preheat your oven to 375°F (190°C).
  3. Prepare the Filling: In a medium bowl, whisk together eggs and milk. Stir in chopped spinach, crumbled feta cheese, shredded mozzarella cheese, dried oregano, dried basil, salt, and pepper.
  4. Assemble and Bake: Pour the filling into the prepared crust. Bake in the preheated oven for 35-40 minutes, or until the quiche is set and the top is lightly golden.
  5. Cool and Serve: Allow the quiche to cool for a few minutes before slicing. Serve warm or at room temperature.

Notes

For a gluten-free version, use a gluten-free pie crust.
