Ingredients
Muffins:
1 3/4 cups all-purpose flour
1 cup granulated sugar
1/2 cup packed brown sugar
1 tsp baking soda
1/2 tsp salt
2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground ginger
1/4 tsp ground cloves
2 large eggs
1 can (15 oz) pumpkin puree
1/2 cup vegetable oil
1/4 cup milk
1 tsp vanilla extract
Cream Cheese Filling:
8 oz cream cheese, softened
1/4 cup granulated sugar
1 large egg yolk
2 tsp vanilla extract
Topping:
1/2 cup pumpkin seeds
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- Prepare the cream cheese filling by mixing softened cream cheese, 1/4 cup granulated sugar, egg yolk, and vanilla extract until smooth. Set aside.
- In a large bowl, whisk together flour, granulated sugar, brown sugar, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
- In another bowl, whisk together eggs, pumpkin puree, vegetable oil, milk, and vanilla extract.
- Pour wet ingredients into dry ingredients and mix until just combined. Be careful not to overmix.
- Spoon a small amount of batter into each muffin cup, filling about 1/3 full. Add a spoonful of cream cheese filling to each cup, then top with more batter, filling each cup almost to the top.
- Sprinkle pumpkin seeds on top of each muffin.
- Bake for 18-22 minutes, or until a toothpick inserted into the muffin (not the cream cheese filling) comes out clean.
- Allow muffins to cool in the pan for 5-10 minutes before transferring to a wire rack to cool completely.
Notes
For best results, ensure eggs and cream cheese are at room temperature.
Do not overmix the batter to keep the muffins light and fluffy.
Store muffins in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
