Strawberry Cheesecake Crumble Cookies are soft, chewy treats combining the creamy richness of cheesecake with fruity strawberry flavor. Vegan-friendly and easy to make, they’re perfect for summer desserts or anytime cravings.
Ingredients
1/2 cup softened butter or plant-based butter
3 oz cream cheese or vegan cream cheese
1 cup sugar or unrefined granulated sweetener
2 tsp pure vanilla extract
1 1/4 cups all-purpose flour (or gluten-free all-purpose blend)
1/2 tsp baking soda
1/4 tsp salt
1/2 cup finely chopped freeze-dried strawberries or strawberry powder
Optional: 1/4 cup white chocolate chips or dairy-free white chips
Instructions
- Preheat the oven to 325°F (160°C) and line a baking tray with parchment paper.
- Cream together the butter, cream cheese, sugar, and vanilla in a mixing bowl until smooth and fluffy.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Add the dry ingredients to the wet mixture, stirring just until combined. Avoid overmixing.
- Gently fold in the freeze-dried strawberries and white chocolate chips, if using.
- Scoop tablespoon-sized portions of dough and place them on the prepared baking sheet, spacing them apart.
- Bake for 10–12 minutes until the edges are set and the centers appear slightly underbaked.
- Let the cookies cool on the tray for 10 minutes, then transfer them to a wire rack to cool completely.
Notes
Use freeze-dried strawberries or strawberry powder for the best flavor and texture.
To make them gluten-free, use a gluten-free all-purpose blend with xanthan gum.
Try almond extract instead of vanilla for a unique twist.
Add a dash of cinnamon for a cozy, holiday version.
Store in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
