Ingredients

For the Dough:

3/4 cup warm milk

2 1/4 tsp active dry yeast

1/4 cup granulated sugar

1 egg

1/4 cup unsalted butter, melted

3 1/2 cups all-purpose flour

1/2 tsp salt

For the Strawberry Filling:

1 1/2 cups fresh strawberries, diced

1/4 cup granulated sugar

2 tbsp cornstarch

1 tsp vanilla extract

For the Lemon Cream Cheese Glaze:

4 oz cream cheese, softened

2 tbsp unsalted butter, softened

1 cup powdered sugar

1 tbsp lemon juice

1 tsp lemon zest

1/2 tsp vanilla extract


Instructions

  1. In a small bowl, combine warm milk, yeast, and 1 tbsp sugar. Let sit for 5-10 minutes until bubbly.
  2. In a large bowl, mix remaining sugar, egg, melted butter, flour, and salt. Add the yeast mixture and knead for 5-7 minutes until smooth and elastic. Cover and let rise for 1 hour or until doubled in size.
  3. Prepare the strawberry filling by cooking diced strawberries, sugar, cornstarch, and vanilla over medium heat for 5-7 minutes until thickened. Set aside to cool.
  4. Roll out the dough on a floured surface into a rectangle and spread the cooled strawberry filling evenly over it.
  5. Roll the dough tightly and cut into 12 equal rolls. Place in a greased 9×13-inch baking dish.
  6. Cover and let rise for another 30 minutes. Preheat the oven to 375°F (190°C).
  7. Bake for 25-30 minutes or until golden brown. Allow to cool slightly.
  8. For the glaze, beat together cream cheese, butter, powdered sugar, lemon juice, zest, and vanilla until smooth. Drizzle over warm rolls before serving.

Notes

For the best flavor, use ripe, fresh strawberries.

If using frozen strawberries, drain any excess liquid after thawing and consider adjusting the cornstarch.

The rolls can be made ahead of time and refrigerated overnight before baking.
