Description
A vibrant and refreshing salad combining peppery arugula, sweet strawberries, tangy goat cheese, and crunchy toasted walnuts, all brought together with a homemade balsamic vinaigrette.
Ingredients
5 oz (about 6 cups) fresh arugula
1 cup fresh strawberries, hulled and sliced
4 oz goat cheese, crumbled
1/3 cup toasted walnuts or pecans
1 tablespoon fresh basil or mint, thinly sliced (optional)
3 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
1 teaspoon honey or maple syrup
6 tablespoons extra virgin olive oil
Salt and black pepper, to taste
Instructions
- In a small bowl, whisk together the balsamic vinegar, Dijon mustard, honey or maple syrup, olive oil, salt, and black pepper until smooth and well combined.
- Arrange the arugula on a large salad platter or in a mixing bowl.
- Top with sliced strawberries, crumbled goat cheese, and toasted walnuts or pecans.
- Drizzle the balsamic vinaigrette over the salad just before serving.
- If desired, sprinkle thinly sliced basil or mint on top and gently toss before serving.
Notes
Add grilled chicken, shrimp, or quinoa to make it more filling.
Try fruit swaps like blueberries, raspberries, or peaches.
Use feta or shaved parmesan if goat cheese is unavailable.
Use sunflower or pumpkin seeds for a nut-free version.
Baby spinach or mixed greens can be used instead of arugula.
