Ingredients

Pink food coloring (optional)

Instructions

Make the Dough

  1. Cream softened butter, granulated sugar, and brown sugar until light and fluffy.
  2. Add egg and vanilla extract; mix until combined.
  3. In a separate bowl, whisk flour, baking powder, baking soda, and salt. Gradually mix into the wet ingredients.
  4. Fold in freeze-dried strawberries and white chocolate chips.

Assemble the Cookies

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Roll 2 tablespoons of dough into a ball, flatten slightly, and indent the center. Add a small dollop of jam, seal, and reshape into a ball.
  3. Place cookies on the sheet 2 inches apart.

Bake
