Description

A comforting and hearty casserole combining classic stuffed pepper flavors with ground beef, bell peppers, rice, and a cheesy blend, all cooked together in one pan for an easy family meal.


Ingredients

1 pound ground beef

1 Tablespoon Worcestershire Sauce

2 bell peppers, chopped

1 onion, finely chopped

1 (15 oz) can low sodium beef broth

3 cloves garlic, minced

1 (15 oz) can diced tomatoes

1 cup uncooked long grain white rice

1/2 teaspoon black pepper

1 Tablespoon Italian seasoning

1 teaspoon salt

3/4 cup Mozzarella cheese, shredded

3/4 cup cheddar cheese, shredded


Instructions

  1. Brown the ground beef in a large skillet over medium-high heat, breaking it up as it cooks.
  2. Add the chopped onions and bell peppers, cooking for 5-10 minutes until softened.
  3. Stir in the minced garlic and cook for 1-2 minutes until fragrant.
  4. Add Worcestershire sauce, beef broth, diced tomatoes, uncooked rice, Italian seasoning, salt, and black pepper; bring the mixture to a boil.
  5. Cover the skillet, reduce heat to simmer, and cook for about 20 minutes, stirring halfway through, until the rice is tender.
  6. Stir in half of the shredded Mozzarella and cheddar cheese until melted and well combined.
  7. Sprinkle the remaining cheese on top, cover again, and let it melt. Optionally, place under the broiler briefly to get a bubbly, cheesy top.
  8. Remove from heat and serve immediately.

Notes

Variations include adding mushrooms, zucchini, or swapping ground beef for ground turkey or chicken.

For a spicier version, add crushed red pepper flakes or hot sauce.

Different cheeses like pepper jack or Monterey Jack can be used for varied flavors.

Brown rice can be used but requires longer cooking time.
