Description

These Sugar Cookie Cheesecake Bars combine the best of both worlds: a soft sugar cookie crust topped with a rich, creamy cheesecake filling. Perfect for parties, family gatherings, or a sweet treat anytime, these bars are easy to make and always a crowd-pleaser. Ingredients

1 package refrigerated sugar cookie dough (or 1 1/4 cups homemade dough)

2 (8 oz) packages cream cheese, softened

1/2 cup granulated sugar

1 teaspoon vanilla extract

1 large egg

1 tablespoon all-purpose flour

1/4 teaspoon salt


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Lightly grease a 9×9-inch baking pan or line with parchment paper.
  3. Press the sugar cookie dough evenly into the bottom of the prepared pan to form the crust.
  4. Bake for 10 minutes, until the crust begins to lightly brown.
  5. While the crust bakes, beat cream cheese and sugar until smooth in a large bowl.
  6. Add the egg, vanilla extract, flour, and salt, mixing until fully incorporated.
  7. Once the crust is baked, pour the cheesecake mixture over it and spread it evenly.
  8. Return the pan to the oven and bake for 25-30 minutes, until the cheesecake is set and lightly golden on top.
  9. Let the bars cool for 10 minutes, then refrigerate for at least 2 hours.
  10. Slice into bars and enjoy!

Notes

For extra flavor, add a pinch of cinnamon or nutmeg to the cheesecake filling.

Try topping with fresh berries, chocolate chips, or a caramel drizzle for added flair.

Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. For longer storage, freeze them for up to 2-3 months.
