Ingredients

Mixed salad greens (such as spinach, arugula, or mixed baby greens)

1 cup strawberries, sliced

1 cup blueberries

1 cup raspberries or blackberries

1/4 cup sliced almonds, toasted

1/4 cup crumbled feta cheese or goat cheese

Optional: fresh mint leaves, for garnish

Lemon Poppy Seed Dressing:

1/4 cup olive oil

2 tbsp lemon juice, freshly squeezed

1 tbsp honey or maple syrup

1 tsp Dijon mustard

1 tsp poppy seeds


Instructions

  1. In a small bowl, whisk together the olive oil, lemon juice, honey (or maple syrup), Dijon mustard, and poppy seeds to make the dressing. Set aside.
  2. In a large salad bowl, combine mixed salad greens, sliced strawberries, blueberries, raspberries or blackberries, and toasted sliced almonds.
  3. Drizzle the Lemon Poppy Seed Dressing over the salad and gently toss to coat evenly.
