Ingredients

For the Filling:

4 large peaches, peeled and sliced

1 cup blueberries

1/2 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 tablespoon cornstarch

For the Topping:

1 cup all-purpose flour

1/2 cup granulated sugar

1 teaspoon baking powder

1/4 teaspoon salt

1/4 cup unsalted butter, cold and cubed

1/2 cup milk

1 tablespoon coarse sugar for sprinkling


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix sliced peaches, blueberries, sugar, lemon juice, vanilla extract, and cornstarch. Pour the mixture into a 9×9-inch baking dish.
  3. In another bowl, whisk together flour, sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the milk until just combined.
  4. Drop spoonfuls of the topping over the fruit filling and sprinkle with coarse sugar.
  5. Bake for 40-45 minutes, or until the topping is golden and the fruit is bubbly.
  6. Let cool for a few minutes before serving warm, preferably with ice cream.

Notes

For best results, use ripe, fresh peaches and blueberries.

Feel free to substitute with other seasonal fruits such as raspberries or blackberries.

If using frozen fruit, thaw and drain excess liquid before use.
