Ingredients
1 cup rolled oats
1/2 cup almond butter (or peanut butter)
1/4 cup pure maple syrup
2 tablespoons chia seeds
2 tablespoons hemp seeds
2 tablespoons unsweetened cacao powder
1 tablespoon ground flaxseed
1/4 teaspoon salt
1/4 cup mini dark chocolate chips
1/2 teaspoon pure vanilla extract
Instructions
- In a large mixing bowl, combine rolled oats, chia seeds, hemp seeds, cacao powder, ground flaxseed, and salt. Stir until evenly mixed.
- Add almond butter, maple syrup, and vanilla extract. Mix thoroughly until a thick, slightly sticky dough forms. Adjust consistency with extra maple syrup if too dry or extra oats if too sticky.
- Fold in the mini dark chocolate chips until evenly distributed.
- Roll the mixture into 14 bite-sized balls using your hands or a small cookie scoop.
- Place on a parchment-lined plate or tray and refrigerate for at least 30 minutes to firm up.
Notes
Use certified gluten-free oats to make this recipe gluten-free.
Substitute almond butter with peanut, cashew, or sunflower seed butter if desired.
Add chopped nuts or shredded coconut for extra texture.
Store in an airtight container in the refrigerator for up to 1 week.
