Ingredients
For the Cake:
1/2 cup butter, room temperature
1 2/3 cups sugar
2 eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
3 cups diced and peeled apples (about 2 large apples)
Optional: 1/4 cup chopped pecans or walnuts
For the Caramel:
1 1/3 cups brown sugar
2 tablespoons half & half
4 tablespoons butter
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
- In a medium bowl, sift together flour, baking soda, salt, cinnamon, and nutmeg. Set aside.
- In a large mixing bowl, beat butter and sugar until light and smooth. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually mix the dry ingredients into the wet mixture until just combined. Fold in diced apples and optional nuts.
- Pour the batter into the prepared springform pan and smooth the top. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
- While the cake bakes, prepare the caramel. Combine brown sugar, half & half, and butter in a small saucepan over medium-low heat. Stir frequently until smooth and combined.
- Once the cake is done, remove it from the oven and pour the caramel sauce evenly over the top.
- Return the cake to the oven for 10-15 minutes until the caramel sets and the surface slightly cracks.
- Let the cake cool in the pan for at least 15 minutes before removing the sides of the springform pan. Slice and serve warm or at room temperature.
Notes
Apple Selection: Firm, tart apples like Granny Smith work best for a balance of flavor.
Storage: Store the cake at room temperature for up to 3 days or refrigerate for up to 5 days. The cake can also be frozen for up to 3 months.
