Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup buttermilk
1 cup chopped pecans
Instructions
- Preheat oven to 350°F (175°C) and grease/flour a 9-inch loaf pan.
- Whisk flour, baking soda, and salt in a bowl. Set aside.
- Cream butter and sugar until fluffy. Add eggs one at a time, then vanilla.
- Alternate adding flour mixture and buttermilk to butter mixture, mixing well.
- Fold in pecans, then pour batter into pan.
- Bake for 50-60 minutes, until a toothpick comes out clean.
- Cool in pan for 10 mins, then transfer to a wire rack to cool completely.
