Ingredients
1 cup fresh pineapple, finely chopped
1/2 cup water
1/4 cup white vinegar
1/4 cup honey
2 tablespoons soy sauce
1 tablespoon fresh ginger, minced
2 garlic cloves, minced
2 teaspoons cornstarch
2 tablespoons water (for cornstarch slurry)
1 teaspoon red chili flakes (adjust to taste)
Salt to taste
Instructions

In a saucepan, combine the chopped pineapple, 1/2 cup water, vinegar, honey, soy sauce, ginger, and garlic. Bring to a simmer.

Reduce heat and let simmer for 10 minutes until the pineapple softens.

Mix the cornstarch with 2 tablespoons of water to make a slurry. Stir into the simmering sauce.

Add chili flakes and salt, and continue simmering for another 5 minutes until the sauce thickens.

Remove from heat and allow the sauce to cool. It will continue to thicken as it cools.
