Ingredients
8 oz goat cheese, softened
4 oz cream cheese, softened
1/2 cup dried cranberries, chopped
1/2 cup pecans, finely chopped
2 tablespoons honey
1/4 teaspoon cinnamon
Pinch of sea salt
1/2 teaspoon orange zest (optional)
Fresh rosemary sprigs for garnish (optional)
Instructions
- In a medium bowl, combine the softened goat cheese and cream cheese until smooth and creamy.
- Stir in the honey, cinnamon, sea salt, and optional orange zest until well incorporated.
- Gently fold in half of the chopped cranberries and half of the chopped pecans.
- Using a small cookie scoop or spoon, shape the mixture into 1-inch balls.
- Roll each cheese ball in the remaining cranberries and pecans until evenly coated.
- Chill in the refrigerator for at least 30 minutes to allow them to firm up.
- Before serving, garnish the platter with fresh rosemary sprigs if desired.
Notes
For a nut-free version, roll the cheese balls in only cranberries or crushed pretzels.
These can be made a day in advance and stored in the fridge.
Bring to room temperature for 10–15 minutes before serving for the best texture.
Use plain log-style goat cheese for best results.
