Ingredients

For the Cake:

2 cups mashed sweet potatoes (about 2 medium sweet potatoes)

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1/2 cup buttermilk

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/4 cup unsalted butter, softened

2 cups powdered sugar

1 teaspoon vanilla extract


Instructions

  1. Prepare Sweet Potatoes: Cook sweet potatoes until tender, mash, and cool. Preheat oven to 350°F (175°C). Grease and flour baking pans.
  2. Mix Dry Ingredients: Combine flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. Cream Butter & Sugars: Beat butter, granulated sugar, and brown sugar until fluffy. Add eggs one at a time, then stir in vanilla.
  4. Combine Mixtures: Alternate adding dry ingredients and buttermilk into the butter mixture. Fold in mashed sweet potatoes.
  5. Bake: Pour batter into pans. Bake 30-35 minutes. Cool in pans for 10 minutes, then transfer to a rack.
  6. Make Frosting: Beat cream cheese and butter until smooth. Add powdered sugar and vanilla. Mix until fluffy.
  7. Assemble Cake: Frost between layers, and over the top and sides. Decorate as desired.

Notes

Substitute buttermilk with a mix of milk and vinegar/lemon juice if needed.

For added crunch, mix in 1/2 cup of chopped pecans or walnuts.

To prevent sticking, use parchment paper liners or grease and flour pans thoroughly.
