Description

A hearty fusion of Mexican and American comfort food, these Pizza Burgers feature seasoned beef, creamy refried beans, cheddar cheese, and enchilada sauce, all wrapped in flour tortillas and baked to perfection.


Ingredients

1 lb ground beef

1 can refried beans

1 medium onion, chopped

2 garlic cloves, minced

1 packet taco seasoning

1/2 cup water

4 large flour tortillas

1 cup shredded cheddar cheese (plus extra for topping)

1 cup enchilada sauce

1 cup sour cream

1 tomato, diced

1/4 cup chopped cilantro

Salt and pepper, to taste


Instructions

  1. Preheat the oven to 375 °F (190 °C).
  2. In a skillet over medium heat, cook ground beef with chopped onion and garlic until browned. Drain excess fat.
  3. Stir in refried beans, taco seasoning, and water. Cook until the mixture is creamy and well combined.
  4. Microwave tortillas wrapped in a damp cloth for 20–30 seconds to soften.
  5. Spoon beef-bean mixture down the center of each tortilla, top with cheddar cheese, and roll tightly.
  6. Place rolled tortillas seam-side down in a baking dish. Pour enchilada sauce over the top and sprinkle with additional cheddar.
  7. Bake for 20 minutes or until cheese is melted and bubbly.
  8. Top each serving with sour cream, diced tomato, and chopped cilantro before serving.

Notes

Use ground turkey for a lighter version.

Add jalapeños or hot sauce for extra heat.

Try cheese blends like Monterey Jack or pepper jack.

Mix in corn or bell peppers for added veggies.

Make it vegetarian by using extra beans and sautéed mushrooms instead of meat.

Store leftovers in the fridge for up to 3 days. Reheat in oven or microwave.

Don’t add toppings like sour cream until after reheating.
