Ingredients
1 pound breakfast sausage (or bacon, crumbled)
6 large eggs
1/2 cup milk
2 cups shredded cheddar cheese
1 (32 oz) bag frozen tater tots
Salt and pepper to taste

Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
- Cook Sausage: In a skillet, cook the breakfast sausage over medium heat until browned. Drain any excess grease and set aside.
- Whisk Eggs: In a bowl, whisk together eggs, milk, salt, and pepper.
- Assemble Casserole: Spread cooked sausage evenly in the baking dish, sprinkle 1 1/2 cups of cheese over it, and pour the egg mixture on top. Arrange frozen tater tots over the top.
- Bake: Bake for 35-40 minutes until the eggs are set and tater tots are golden.
- Add Cheese & Garnish: Sprinkle the remaining cheese and bake for another 5 minutes. Garnish with green onions if desired.
