Ingredients

For the Chicken:

1 1/2 pounds boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

2 tablespoons olive oil

Salt and pepper to taste

For the Teriyaki Sauce:

1/2 cup soy sauce

1/4 cup water

1/4 cup honey

2 tablespoons brown sugar

1 tablespoon rice vinegar

1 tablespoon minced garlic

1 tablespoon minced ginger

1 tablespoon cornstarch

2 tablespoons water

For Garnish:

Sliced green onions

Sesame seeds


Instructions

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Season chicken pieces with salt and pepper, then add them to the skillet. Cook until browned and cooked through, about 6-8 minutes.
  3. While the chicken cooks, prepare the teriyaki sauce: In a medium bowl, whisk together soy sauce, 1/4 cup water, honey, brown sugar, rice vinegar, garlic, and ginger.
  4. In a small bowl, mix cornstarch with 2 tablespoons water to create a slurry. Add this slurry to the sauce mixture and stir well.
  5. Pour the teriyaki sauce into the skillet with the chicken. Stir to coat the chicken evenly.
  6. Reduce heat to low and simmer for 2-3 minutes until the sauce thickens.
  7. Remove from heat and transfer to a serving dish. Garnish with green onions and sesame seeds.
  8. Serve hot with rice or vegetables.

Notes

For a gluten-free option, use tamari instead of soy sauce.

You can make the teriyaki sauce in advance and store it in the refrigerator for up to a week.
