Description

Craving the spicy and crispy fun of Texas Roadhouse’s Rattlesnake Bites? Look no further! This recipe delivers all the flavor and crunch right at home. Melty cheese and perfectly fried jalapeños make these bites irresistible.

Ingredients

1 pound jalapeños, halved and deseeded (wear gloves for handling)

8 ounces cream cheese, softened

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 cup all-purpose flour

2 large eggs, beaten

2 cups breadcrumbs

Vegetable oil for frying

Instructions

  1. Prep the Jalapeños: Wear gloves and cut the jalapeños in half lengthwise, removing the seeds and membranes.
  2. Make the Filling: Combine cream cheese, cheddar cheese, mozzarella cheese, garlic powder, onion powder, salt, and pepper in a bowl until smooth.
  3. Fill the Jalapeños: Spoon the cheese mixture into each jalapeño half.
  4. Breading Station: Set up three bowls: flour, beaten eggs, and breadcrumbs.
  5. Coating the Bites: Dredge each jalapeño half in flour, then egg, and finally coat completely with breadcrumbs.
  6. Fry to Perfection: Heat oil to 350°F (175°C) and fry the breaded bites in batches for 2-3 minutes per side, or until golden brown and crispy.
  7. Drain and Serve: Remove from oil, drain on paper towels, and let cool slightly before serving.
  8. Dipping Delight: Enjoy with your favorite dipping sauce, like ranch dressing.

Notes

For milder bites, remove some or all of the jalapeño seeds.

Double dredge for extra crispiness.

Serve warm for the meltiest cheese.
