Ingredients

1 ½ cups all-purpose flour

1 ½ teaspoons baking powder

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

3 large eggs

1 teaspoon almond extract

1 teaspoon vanilla extract

½ cup whole milk

½ cup ground almonds (optional)

Powdered sugar (optional, for dusting)


Instructions

  1. Preheat oven to 350°F (175°C) and grease and flour an 8-inch round cake pan.
  2. In a medium bowl, whisk together flour, baking powder, salt, and ground almonds (if using).
  3. In a large bowl, beat butter and sugar until light and fluffy (3-4 minutes).
  4. Add eggs one at a time, mixing well after each. Stir in almond and vanilla extracts.
  5. Gradually add dry ingredients in batches, alternating with milk, beginning and ending with dry ingredients. Mix until combined.
  6. Pour batter into prepared pan, smoothing the top.
  7. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Dust with powdered sugar if desired before serving.

Notes

For added flavor, incorporate citrus zest or chocolate chips.
