Ingredients

2 tablespoons olive oil

1 large onion, diced

1 green bell pepper, diced

3 cloves garlic, minced

1 lb ground beef

2 tablespoons chili powder

1 teaspoon ground cumin

1/2 teaspoon paprika

1/2 teaspoon dried oregano

1/4 teaspoon cayenne pepper (optional)

Salt and pepper, to taste

1 can (15 oz) diced tomatoes

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (8 oz) tomato sauce

1 cup beef broth

Instructions

  1. Cook the Ground Beef: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon. Drain any excess fat.
  2. Sauté Vegetables: Add the diced onion, bell pepper, and garlic. Cook for 3-4 minutes until softened.
  3. Add Spices: Stir in the chili powder, cumin, paprika, oregano, cayenne pepper (if using), salt, and pepper. Cook for 1 minute.
  4. Add Remaining Ingredients: Stir in the diced tomatoes, kidney beans, black beans, tomato sauce, and beef broth.
  5. Simmer: Bring to a simmer, reduce heat to low, cover, and cook for 30-40 minutes, stirring occasionally. Adjust seasonings as needed.
  6. Serve: Ladle into bowls and top with your favorite toppings.

Notes

For extra heat, consider adding diced jalapeños or more cayenne pepper.

This chili tastes even better the next day, making it a great make-ahead meal.
