Ingredients

4 medium flour tortillas (or corn tortillas for a gluten-free option)

6 large eggs

1 cup milk (or dairy-free milk alternative)

1 cup shredded cheese (cheddar, mozzarella, or your choice)

1/2 cup diced bell peppers

1/2 cup chopped spinach

1/4 cup diced onions

1/2 cup cooked and crumbled beef or chicken sausage (optional)

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon smoked paprika (optional)

Fresh parsley or chives for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Prepare the tortilla crust: Lightly grease a 9-inch pie dish. Arrange tortillas to cover the bottom and sides, trimming any overhang. (For a crispier crust, pre-bake for 5 minutes.)
  3. Make the egg mixture: In a large bowl, whisk together eggs, milk, garlic powder, salt, black pepper, and smoked paprika.
  4. Assemble the quiche: Evenly spread bell peppers, spinach, onions, and cooked sausage over the tortilla crust. Pour the egg mixture on top and sprinkle with shredded cheese.
  5. Bake for 30–35 minutes, until the center is set and the edges are golden brown.
  6. Cool & Serve: Let the quiche rest for 5–10 minutes before slicing. Garnish with fresh parsley or chives and serve warm.

Notes

Make Ahead: Assemble the quiche the night before, store in the fridge, and bake fresh in the morning.

Prevent Sogginess: Pre-bake the tortilla crust for 5 minutes before adding the filling.

Storage: Keep in an airtight container in the fridge for up to 4 days. Freeze for up to 2 months.

Reheat: Warm in the oven at 350°F (175°C) for 10–15 minutes or microwave for 1–2 minutes.
