Ingredients
For the cookies:
2 cups all-purpose flour
1/2 teaspoon baking powder

1 large egg

1/4 cup strong brewed coffee, cooled
For the filling:
1/2 cup mascarpone cheese
1/4 cup powdered sugar
1/2 teaspoon vanilla extract
For the topping:
1 tablespoon cocoa powder
1 tablespoon instant espresso powder
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, beat the butter and granulated sugar with an electric mixer until light and fluffy. Add the egg and vanilla extract, mixing until combined. Gradually mix in the cooled coffee.
- Slowly add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the back of a spoon.
- Bake for 10-12 minutes, or until the edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- In a small bowl, mix the mascarpone cheese, powdered sugar, and vanilla extract until smooth.
- Once the cookies are completely cooled, spread a generous amount of mascarpone filling on the flat side of half the cookies. Top with the remaining cookies to create sandwiches.
- In a small bowl, combine the cocoa powder and instant espresso powder. Lightly dust the tops of the cookies with the mixture.
