Ingredients

2 tablespoons olive oil

1 small onion, chopped

3 cloves garlic, minced

2 cans (14.5 oz each) diced tomatoes

1 can (15 oz) tomato sauce

2 cups chicken broth

1 tablespoon sugar

1 teaspoon salt

½ teaspoon pepper

1 teaspoon dried oregano

1 teaspoon dried basil

1 cup heavy cream

½ cup freshly grated Parmesan cheese

1 tablespoon fresh basil, chopped (for garnish)


Instructions

  1. Sauté the Onion and Garlic: Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté for 5 minutes until softened. Add minced garlic and cook for another 30 seconds until fragrant.
  2. Add Tomatoes and Broth: Stir in diced tomatoes, tomato sauce, chicken broth, sugar, salt, pepper, oregano, and dried basil. Bring the mixture to a boil, then reduce heat and simmer for 20 minutes to let the flavors meld.
  3. Blend the Soup (Optional): For a smoother texture, use an immersion blender to blend the soup until smooth. Alternatively, carefully transfer the mixture to a blender and blend in batches.
