Ingredients
½ small red onion, finely chopped
8 medium tomatoes (about 500g), coarsely chopped and drained
2–3 garlic cloves, crushed
6–8 fresh basil leaves, finely chopped
30ml balsamic vinegar
60–80ml extra virgin olive oil
1 baguette or ciabatta loaf, sliced
Salt and freshly ground black pepper, to taste
Instructions
- Prepare the Tomato Mixture:
- Combine chopped tomatoes, red onion, garlic, and basil in a bowl.
- Drizzle with balsamic vinegar and extra virgin olive oil, stirring well.
- Season with salt and pepper, then let sit for 10-15 minutes.
- Toast the Bread:
- Preheat oven to 375°F (190°C) or heat a grill pan over medium heat.
- Brush bread slices lightly with olive oil on both sides.
- Toast in the oven for 8-10 minutes or grill for 1-2 minutes per side until golden.
- Assemble the Bruschetta:
- Generously spoon the tomato mixture onto the toasted bread.
- Serve immediately, garnished with extra basil if desired.
Notes
Assemble bruschetta just before serving to keep the bread crisp.
The tomato mixture can be stored in an airtight container in the fridge for up to 2 days.
