Ingredients
2 tablespoons butter
1 small onion, chopped
2 cloves garlic, minced
1 (28 oz) can crushed tomatoes
4 cups chicken broth
1 cup heavy cream
1 (9 oz) package cheese tortellini
1 teaspoon dried basil
1/2 teaspoon dried oregano
Salt and pepper, to taste
Fresh basil, for garnish (optional)
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
- Add the minced garlic and cook for 1 minute until fragrant.
- Stir in the crushed tomatoes, chicken broth, dried basil, and oregano. Bring to a simmer and cook for 10 minutes, stirring occasionally.
- Reduce the heat to low and stir in the heavy cream. Season with salt and pepper to taste.
- Add the cheese tortellini and cook according to the package instructions, about 5-7 minutes, until tender.
- Serve hot, garnished with fresh basil if desired.
Notes
For a vegetarian option, swap chicken broth with vegetable broth.
You can add cooked chicken, sausage, or crispy bacon for extra protein.
For a lighter version, replace heavy cream with half-and-half or a non-dairy alternative.
To freeze, prepare the tomato soup base without the tortellini and cream, adding them when reheating.
