Description

These Turkish-style doner kebab wraps combine seasoned ground beef, roasted vegetables, and a rich tomato-butter sauce for a flavorful and satisfying meal. Perfect for an easy weeknight dinner with bold, street-food-inspired taste.


Ingredients

1 medium onion, peeled and cut into chunks

2 garlic cloves, peeled

1 lb ground beef

1 tbsp tomato paste

2 tbsp Greek yogurt

1 tsp ground cumin

1 tsp paprika

1/4 tsp red pepper flakes

1 tsp kosher salt

1/2 tsp black pepper

3 medium tomatoes, quartered

2 green peppers

1 tbsp olive oil

1/4 tsp kosher salt

1/8 tsp black pepper

4 tbsp unsalted butter

2 tbsp tomato paste

1/4 cup hot water

1/4 tsp kosher salt

4 lavash breads or pita breads

1/2 cup sumac onions


Instructions

  1. Preheat the oven to 400°F (204°C). Purée the onion and garlic until smooth.
  2. In a bowl, combine the onion mixture with ground beef, tomato paste, Greek yogurt, cumin, paprika, red pepper flakes, salt, and black pepper. Mix thoroughly by hand.
  3. Divide the meat into three portions. Flatten each portion between parchment paper into rectangles, then roll each one tightly and place on a sheet pan.
  4. Add the tomatoes and green peppers to the same pan. Drizzle with olive oil and season with salt and pepper.
  5. Bake for about 20 minutes, until the meat is browned and vegetables are tender.
  6. Let the meat cool slightly, then unroll and tear into strips.
  7. To make the sauce, melt butter in a pan, stir in tomato paste, then whisk in hot water and salt. Simmer until smooth.
  8. Warm the lavash or pita breads. Spread some sauce, add doner meat, roasted vegetables, and sumac onions.
  9. Drizzle with additional sauce, roll into wraps, and serve warm.

Swap ground beef with lamb for a more traditional flavor.

Use ground chicken or turkey for a lighter option.

Add cucumbers or yogurt sauce for extra freshness.
